Apple-pecan dressing

Measure Ingredient
2 teaspoons Olive oil
¾ cup Diced bacon
½ cup Chopped onion
½ cup Celery
1½ cup Peeled and diced Granny
\N \N Smith apples
½ cup Pecan pieces
¼ cup Chopped parsley
¼ cup Chopped fresh sage
\N \N Salt and pepper to taste
4 cups Cubed day-old bread, cut
\N \N Into 1-inch cubes
\N \N Creole spice to taste-recipe
\N \N Enclosed
2 cups Chicken stock

In a large skillet heat oil and cook the bacon until it's crispy, about 4 minutes. Add onions, celery, apples, pecans, parsley, sage, and cook for 3 minutes. Season to taste with salt and pepper. Stir in the bread cubes, Creole spice, and chicken stock. Cook until heated through. Remove from heat and adjust the seasonings.
