Apple muffins #3

Yield: 24 Servings

Measure Ingredient
1½ cup Brown sugar
⅔ cup Oil
1 Egg
1 cup Buttermilk
1 teaspoon Baking soda
1 teaspoon Salt
1 teaspoon Vanilla
2½ cup Flour
1½ cup Diced apples
½ cup Chopped pecans
1 tablespoon Butter; softened
⅓ cup Sugar

From: Tina Rogers <CAJUNT@...> Date: Sun, 11 Aug 1996 07:01:21 EDT Combine brown sugar, oil and egg. In another bowl combine buttermilk, soda, salt and vanilla. Add this mixture to sugar mixture and alternate with flour. Mix well after each addition. Fold in diced apples and chopped pecans. Pour into muffin tins and sprinkle with ⅓ cup sugar combined with 1 tbsp butter. Bake at 325' for 30 minutes. Yields: 2 dozen EAT-L Digest 10 August 96
