Zucchini with sausage

Yield: 6 servings

Measure Ingredient
2½ pounds Zucchini
1 pounds Sausage Meat
1 large Onion -- diced
1 Green Pepper -- diced
6 To 7 Tomatoes, peeled and sliced 1/4"
Salt And Freshly Ground Pepper to taste
1 cup Parmesan Cheese, freshly grated
¼ cup Bread Crumbs
2 tablespoons Butter -- softened

In a saucepan, blanch the zucchini in boiling salted water to cover for 10 mins. Drain. Cut the zucchini into ½" slices.

In a skillet, saute the sausage meat (breaking it into pieces wuth a fork) with the onion and green pepper until the onion is golden.

Drain.

Layer the zucchini, sausage mixture tomatoes sprinkled with salt and pepper, and Parmesan cheese in a lightly oiled 2-qt baking dish, ending with a layer of tomatoes. Sprinkle the tomatoes with the bread crumbs and more cheese. Add salt and pepper to taste, dot the crumbs with butter, and bake the dish in a preheated 350 F. oven for 1 hr, or until top is golden.

Serves 6-8.
