|1 pounds||Sausage Meat|
|1 large||Onion -- diced|
|1||Green Pepper -- diced|
|6||To 7 Tomatoes, peeled and sliced 1/4"|
|Salt And Freshly Ground Pepper to taste|
|1 cup||Parmesan Cheese, freshly grated|
|¼ cup||Bread Crumbs|
|2 tablespoons||Butter -- softened|
In a saucepan, blanch the zucchini in boiling salted water to cover for 10 mins. Drain. Cut the zucchini into ½" slices.
In a skillet, saute the sausage meat (breaking it into pieces wuth a fork) with the onion and green pepper until the onion is golden.
Layer the zucchini, sausage mixture tomatoes sprinkled with salt and pepper, and Parmesan cheese in a lightly oiled 2-qt baking dish, ending with a layer of tomatoes. Sprinkle the tomatoes with the bread crumbs and more cheese. Add salt and pepper to taste, dot the crumbs with butter, and bake the dish in a preheated 350 F. oven for 1 hr, or until top is golden.
