Zucchini santa fe

Ingredients

3cupsSliced zucchini
½cupChopped onion
1teaspoonCooking oil
1canChopped green chilies, drain
1mediumTomato
½teaspoonSalt, optional
¼teaspoonPepper
¼teaspoonGarlic powder
½cupCheddar or mj cheese, shred

Directions

In a large skillet, saute the zucchini and onion in oil for 3-4 minutes.

Add chilies, tomato, sald if desired, pepper and garlic powder. Cook and stir for 3-4 minutes. Spoon into a serving bowl and sprinkle with cheese.
