Zucchini pie #2

Yield: 6 Servings

Measure Ingredient
4 cups Zucchini; chopped
½ large Onion; chopped
\N \N Salt and pepper
\N dash Nutmeg
2 \N Eggs; beaten
½ cup Dried bread crumbs
8 slices Swiss cheese
2 tablespoons Parsley; chopped
\N \N Paprika

In a medium-sized bowl combine beaten eggs with all ingredients except cheese , parsley and paprika. Lightly grease a pie pan, preferably deep dish, and layer zucchini mixture alternately with cheese, ending with cheese. Sprinkle with parsley and paprika and bake in a 350 degree oven for 25 minutes.
