Zucchini brownies

Yield: 8 servings

Measure Ingredient
3 cups Zucchini -- grated
⅔ cup Applesauce
3 teaspoons Vanilla
1 teaspoon Coconut extract
3 cups Unbleached flour
1½ cup Granulated sugar
½ teaspoon Salt
2 teaspoons Baking powder
2 teaspoons Baking soda
⅓ cup Cocoa powder -- sifted

Preheat oven at 350. Prepare a 8 x 15" baking pan with cooking spray and flour. In a mixing bowl, combine zucchini, applesauce, vanilla, and coconut extract. In another mixing bowl, combine flour, sugar, salt, baking powder, baking soda and cocoa powder. Mix wet ingredients with dry ingredients just until moistened. Spread batter in prepared pan. Bake for 25 minutes.
