Ziti with fresh herbs

Yield: 4 Servings

Measure Ingredient
1 tablespoon Finely chopped fresh parsley
1 tablespoon Finely chopped fresh tarragon
1 tablespoon Finely chopped fresh chives
1 tablespoon Finely chopped fresh chervil (or use 1 additional tsp each of chopped tarragon and parsley)
\N \N Salt to taste
1 pounds Ziti
2 tablespoons Butter
2 tablespoons Olive oil
½ cup Grated parmesan cheese (I use 3/4 cup)
\N can Also add some fresh diced tomato--about 1 medium tomato

submitted by: sgjg6566@... (Julie, Michigan, USA) Hi everyone! Now that the fresh herbs are really coming up I like to serve this recipe for a simple delicious meal! It's from the New York Times Cookbook and one of my favorites! Combine the parsley, tarragon, chives and chervil in a small bowl. Bring 2 quarts of water to a boil in a large pot and add salt. Add the ziti and cook about 12 minutes; drain. Return the ziti to the pot and add the butter and oil. Toss briefly and add the herb mixture (and the tomato if you want). Toss and serve immediately with the grated cheese. Enjoy!! DAVE <DAVIDG@...>
