1 \N | Roasted red peppers -- jarred or homemade |
1 \N | Clove garlic -- minced |
2 tablespoons | Onion -- minced |
1 tablespoon | Olive oil |
\N \N | Salt and pepper |
¼ cup | Spicy Tomato Butter |
⅓ cup | Parmesan cheese -- freshly grated |
2 tablespoons | Basil leaves -- chopped |
2 tablespoons | Parsley -- chopped |
Boil the ziti in a large pot of lightly salted boiling water under tender, about 12 minutes. While the pasta is cooking, dice the reserved squash and the roasted pepper. Saute the garlic and onion in the olive oil until softened, about 10 seconds. Do not allow them to brown. Add the squash and roasted pepper and heat through.
Season liberally with salt and pepper. When the pasta is ready, drain well and toss with the vegetables, tomato butter, cheese, basil and parsley. Season with more salt and pepper if needed and serve.
