West indian marinade

| 1 | Scotch Bonnet Pepper, Seeded and Finely Chopped | |

| 1 | teaspoon | Salt |
| 1 | teaspoon | Freshly Ground Black Pepper |
| ½ | cup | Chicken Stock |
| ½ | cup | White Wine Vinegar |
| Juice of One Lime | ||
| 1 | teaspoon | Sweet Paprika |
| 1 | teaspoon | Dried Oregano |
| 2 | Sprigs Fresh Coriander, Finely Chopped | |
| 2 | Sprigs Fresh Parsley, Finely Chopped | |
Directions
In a large bowl, combine all the ingredients to form a paste. Cover and refrigerate.
