West indian marinade

Ingredients

1Green Pepper, Seeded and Finely Chopped
1Scotch Bonnet Pepper, Seeded and Finely Chopped
2Cloves Garlic, Minced
1teaspoonSalt
1teaspoonFreshly Ground Black Pepper
½cupChicken Stock
½cupWhite Wine Vinegar
Juice of One Lime
1teaspoonSweet Paprika
1teaspoonDried Oregano
2Sprigs Fresh Coriander, Finely Chopped
2Sprigs Fresh Parsley, Finely Chopped

Directions

In a large bowl, combine all the ingredients to form a paste. Cover and refrigerate.
