Yield: 8 Servings
|5 cups||Sticks or 32 baby carrots|
|½ cup||Melted butter|
|¼ teaspoon||Coarse pepper|
|2 tablespoons||Lemon juice|
|¼ teaspoon||Grated lemon peel|
|½ cup||Coarsely broken walnuts|
Cook carrots in water with ½ teaspoon salt added, just until tender.
Drain well. Meanwhile, heat remaining ingredients except the walnuts. Pour this topping over hot carrots. Toss in walnuts. Tootie Note: I use the small baby carrots. Put in my Pampered Chief steamer with ¾ cup water or so and steam in microwave till tender and proceed.
