| 3 | tablespoons | Butter |
| 1½ | cup | Mushrooms;sliced |
| 2 | cups | Broccoli;chopped |
| 1 | cup | Tomato;diced |
| 1 | cup | Rice;uncooked |
| 2 | cups | Water |
| 2 | Bouillon;chicken;cubes | |
| ½ | teaspoon | Salt |
| ½ | teaspoon | Oregano |
| ¼ | cup | Parmesan Cheese;grated |
Directions
Cook onions in butter until golden. Add mushrooms, broccoli and tomatoes and cook about 4 minutes.
Add water and bouillon cubes and bring to a boil. Stir in rice, salt and oregano.
Cover and cook over low heat, 20 minutes or until water is absorbed. Stir in Parmesan cheese. Serve hot or cold.
