Vegetable bean burgers

| 420 | grams | Mixed beans; drained well |
| 75 | grams | Your favourite stuffing mix |
| 1 | Zucchini; grated | |
| 1 | Carrot; grated | |
| 4 | Hamburger buns; lightly toasted | |
| Salt and pepper | ||
| Yoghurt or mayonnaise | ||
| Lettuce | ||
| Tomato | ||

TO SERVE
In a saut pan, add ½ tbs oil. Heat and saut the spring onions and garlic.
Add the mixed beans and cook for 2 mins, mashing them with a fork.
Put the stuffing mix into a bowl, pour over 300ml boiling water, mix and stir in the carrot, zucchini and bean mixture.
Season and divide into 4 burgers.
Place the remaining oil into a saut pan and cook the burgers for 3 minutes on each side until golden and brown.
Stack onto the toasted burger buns with the salad ingredients.
Serve with potato wedges.
