Vegetable bean burgers

Yield: 4 servings

Measure Ingredient
1 tablespoon Olive oil
3 Spring onions; chopped
1 Clove garlic; crushed
420 grams Mixed beans; drained well
75 grams Your favourite stuffing mix
1 Zucchini; grated
1 Carrot; grated
4 Hamburger buns; lightly toasted
Salt and pepper
Yoghurt or mayonnaise
Lettuce
Tomato
Cucumber
Onion slices

BEAN BURGERS

TO SERVE

In a saut‚ pan, add ½ tbs oil. Heat and saut‚ the spring onions and garlic.

Add the mixed beans and cook for 2 mins, mashing them with a fork.

Put the stuffing mix into a bowl, pour over 300ml boiling water, mix and stir in the carrot, zucchini and bean mixture.

Season and divide into 4 burgers.

Place the remaining oil into a saut‚ pan and cook the burgers for 3 minutes on each side until golden and brown.

Stack onto the toasted burger buns with the salad ingredients.

Serve with potato wedges.
