Black bean burgers

Quantity Ingredient
3 cans Black beans; rinsed and drained
cup Onion; finely chopped
¼ cup Red bell pepper; finely chopped
1 tablespoon Jalapeno pepper; finely chopped
1 teaspoon Ground cumin
3 tablespoons Sesame seeds; roasted
1 tablespoon Lime juice
1 teaspoon Salt
½ teaspoon Peppr
2 tablespoons Vegetable oil

In large bowl, mash beans until most are smooth, leaving some intact. Add onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime juice, salt and pepper; mix well. Divide mixture into 8 equal patties about 3-½ inches in diameter. In large heavy frypan, heat oil over medium-low heat.

Cook patties, in batches, for 8-10 minutes or until lightly browned, tuning once and adding more oil if necessary. Carefully remove burgers from frypan to platter and tent with foil. Let stand 5 minutes before serving.

Makes 8 burgers.
