Yield: 8 Servings
|3 cans||Black beans; rinsed and drained|
|⅔ cup||Onion; finely chopped|
|¼ cup||Red bell pepper; finely chopped|
|1 tablespoon||Jalapeno pepper; finely chopped|
|1 teaspoon||Ground cumin|
|3 tablespoons||Sesame seeds; roasted|
|1 tablespoon||Lime juice|
|2 tablespoons||Vegetable oil|
In large bowl, mash beans until most are smooth, leaving some intact. Add onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime juice, salt and pepper; mix well. Divide mixture into 8 equal patties about 3-½ inches in diameter. In large heavy frypan, heat oil over medium-low heat.
Cook patties, in batches, for 8-10 minutes or until lightly browned, tuning once and adding more oil if necessary. Carefully remove burgers from frypan to platter and tent with foil. Let stand 5 minutes before serving.
Makes 8 burgers.
