Black bean burgers

Ingredients

3cansBlack beans; rinsed and drained
cupOnion; finely chopped
¼cupRed bell pepper; finely chopped
1tablespoonJalapeno pepper; finely chopped
1teaspoonGround cumin
3tablespoonsSesame seeds; roasted
1tablespoonLime juice
1teaspoonSalt
½teaspoonPeppr
2tablespoonsVegetable oil

Directions

In large bowl, mash beans until most are smooth, leaving some intact. Add onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime juice, salt and pepper; mix well. Divide mixture into 8 equal patties about 3-½ inches in diameter. In large heavy frypan, heat oil over medium-low heat.

Cook patties, in batches, for 8-10 minutes or until lightly browned, tuning once and adding more oil if necessary. Carefully remove burgers from frypan to platter and tent with foil. Let stand 5 minutes before serving.

Makes 8 burgers.
