Black bean burgers

3 | cans | Black beans; rinsed and drained |
⅔ | cup | Onion; finely chopped |
¼ | cup | Red bell pepper; finely chopped |
1 | tablespoon | Jalapeno pepper; finely chopped |
1 | teaspoon | Ground cumin |
3 | tablespoons | Sesame seeds; roasted |
1 | tablespoon | Lime juice |
1 | teaspoon | Salt |
½ | teaspoon | Peppr |
2 | tablespoons | Vegetable oil |
In large bowl, mash beans until most are smooth, leaving some intact. Add onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime juice, salt and pepper; mix well. Divide mixture into 8 equal patties about 3-½ inches in diameter. In large heavy frypan, heat oil over medium-low heat.
Cook patties, in batches, for 8-10 minutes or until lightly browned, tuning once and adding more oil if necessary. Carefully remove burgers from frypan to platter and tent with foil. Let stand 5 minutes before serving.
Makes 8 burgers.
