Ingredients

¾cupDark rum; (or sunbstitute unfiltered apple cider)
cupBrown sugar
3tablespoonsKosher salt
teaspoonPickling spice
1teaspoonLightly crushed anise seed
1teaspoonLightly crushed dill seed

Directions

marinate the fish in the refrigerator for 3-4 hours. Remove and let sit on a rack at room temp for ½ hour to form a skin.

Smoke, skin side down (indirect heat) for 1½ - 2 hours. It's so good, it'll convert non- filsh lovers.
