¾ | cup | Dark rum; (or sunbstitute unfiltered apple cider) |
⅓ | cup | Brown sugar |
3 | tablespoons | Kosher salt |
1½ | teaspoon | Pickling spice |
1 | teaspoon | Lightly crushed anise seed |
1 | teaspoon | Lightly crushed dill seed |
Directions
marinate the fish in the refrigerator for 3-4 hours. Remove and let sit on a rack at room temp for ½ hour to form a skin.
Smoke, skin side down (indirect heat) for 1½ - 2 hours. It's so good, it'll convert non- filsh lovers.
