Two-minute smoked salmon spread

Ingredients

¾poundsSmoked salmon chopped, divided
cupPlain yogurt
1pinchWhite pepper
¼teaspoonSweet or hot paprika (optional)
½tablespoonExtra-virgin olive oil
2teaspoonsGrated lemon zest
2tablespoonsFresh lemon juice
2tablespoonsGreen onion (white & green parts), chopped separately

Directions

In bowl of food processor fitted with metal blade, combine half of salmon with remaining ingredients except green onion. Process to smooth puree.

Stir in remaining salmon and the white part of the green onion.

Transfer to serving dish, cover with plastic wrap and chill 30 minutes.

Sprinkle with green part of onion before serving. Makes 1½ cups.
