Two-fruit muffins

Yield: 12 muffins

Measure Ingredient
½ cup Shortening
¾ cup Sugar
½ cup Crushed, drained pineapple
1 large Egg; beaten
1 cup Mashed bananas
1½ cup All-purpose flour
1 teaspoon Soda
½ teaspoon Baking powder
1 teaspoon Nutmeg OR cinnamon
1 teaspoon Vanilla

Cream shortening and sugar. Add egg. Beat well. Fold in sifted dry ingredients, alternately with the fruit. Add vanilla. Blend, but do not over mix. (This makes tunnels in the muffins.) Spoon into greased muffin pans and bake in a 375 F oven for 20 - 25 minutes, or until done.
