Tutu's favorite mango bread

Ingredients

2cupsAll-purpose flour
2teaspoonsBaking soda
½teaspoonSalt
2teaspoonsCinnamon
3largesIsland eggs, well beaten
cupSugar, *
¾cupSalad oil
2cupsMangoes, chopped
½cupCoconut, shredded
½cupMacadamia nuts, chopped
½cupGolden raisins

Directions

* less if mangoes are very sweet Sift flour, soda, salt and cinnamon together, mixing well. Form a well in the center and mix in the rest of the ingredients, adding the fruit and nuts last. Pour into a greased and floured loaf pan and bake for one hour in a 350 degree oven.

BANANA NUT BREAD

You can use this recipe for Banana Bread by substituting 1½ cups of mashed ripe bananas for the 2 cups of mangoes.
