Turkey-apple hash

Ingredients

1 | cup | Chopped onion |
10 | ounces | Skinless boneless turkey breast; cubed |
2 | smalls | Macintosh apples; cubed |
8 | ounces | Baked potato; cubed |
2 | tablespoons | Apple Cider; Or Apple Juice |
½ | teaspoon | Crushed fennel seeds; optional |
Freshly ground black pepper; to taste |
Directions
Place large nonstick saucepan over medium-high heat 30 seconds. Add oil; heat 30 seconds more. Add onion and cook, stirring constantly, until soft, 5-6 minutes. Stir in turkey and continue cooking until browned on all sides.
Stir in apples, potato, cider and fennel seeds ( if using); partially cover and cook, stirring occasionally, until apples are soft and turkey is cooked through, about 5 minutes. Sprinkle with pepper.
Serving (about ¾ cup) provides: ½ fat, ½ fruit, ½ veg, 2 pro, ½ bread, 4 cal.
