Tropical chicken salad (passover)

Ingredients

TROPICAL CHICKEN SALAD

[Serves 4 to 6]
4cupsChicken; cut up (you can use leftover turkey)
2largesOranges; peeled; sectioned; (don't save juice)
cupFresh Pineapple; cut into chunks; Save shell
1cupSeedless Grapes
1cupCelery; chopped
¾cupPassover Mayonnaise
3-4 tb Lemon Juice
½teaspoonSalt
1/2-3/4 c Cashews

Directions

In a large bowl, combine chicken, fruit and celery. Mix well. Cover and chill. In a small bowl, combine the remaining ingredients except the nuts. Cover and chill. Just before serving, combine the chicken mixture with the dressing and nuts. Serve in hollowed out pineapple shells (easy clean up) or on lettuce.
