4 cups | Cheese tortellini; cooked |
1½ cup | Italian sausage; cooked and sliced |
¼ cup | Fresh parmesan cheese; grated |
2 \N | Tomatoes; diced |
1 cup | Olive oil |
½ cup | Red wine vinegar |
3 tablespoons | Pesto |
3 \N | Cloves roasted garlic |
\N \N | Salt and pepper to taste |
1. Mix all ingredients except tortellini and sausage. 2. Once thoroughly mixed add to tortellini and sausage.
Notes: You can eat this at room temperature or chilled.
