Tofu \"egg\" salad with sun-dried tomatoes

Ingredients

| 6 | ounces | Tofu |
| 2 | teaspoons | Dijon mustard |
| 2 | eaches | Scallions, minced |
| Salt & black pepper | ||
| 1 | pinch | Parsley, fresh is best |
| 5 | eaches | Sun-dried tomatoes, diced |
| 4 | slices | Whole-wheat bread |
| Lettuce leaves, as needed | ||
Directions
Roughly mash the tofu in a mixing bowl. Mix in the mustard, minced scallions, salt & pepper. Add the parsley & stir in the diced tomatoes.
Generously heap the tofu spread on the bread. Layer with lettuce leaves & any other vegetables, such as watercress or bean sprouts, that you might desire. Top with another slice of bread to make into a sandwich. Serve immediately. Otherwise the bread will become soggy.
