Tofu sandwich spread

Ingredients

| ½ | Green bell pepper; diced | |
| 1 | Stalk celery; diced | |
| 1 | Carrot; grated | |
| 4 | smalls | Green onions; sliced |
| 1 | tablespoon | Parsley |
| 1 | tablespoon | Capers |
| 2 | tablespoons | Tofu based mayonnaise substitute |
| 1 | tablespoon | Prepared mustard |
| ½ | teaspoon | Fresh lemon juice |
| ¼ | teaspoon | Pepper |
| ¼ | teaspoon | Thyme |
Directions
Mix all ingredients together and serve on your favorite bread with sprouts, tomatoes and cucumbers.
