Cold tofu salad

Ingredients

QuantityIngredient
2Blocks tofu; drained on paper towels, (about 20 oz)
3tablespoonsRice vinegar
2tablespoonsLight soy sauce
1tablespoonSoy oil
1tablespoonWhite sesame seeds
½cupRoughly chopped cilantro
1tablespoonFinely grated fresh ginger; (generous)
2Green onions; finely sliced
Salt; to taste

Directions

DRESSING

Combine the dressing ingredients and set aside.

Cut the tofu into 1 inch cubes and arrange on individual plates. Cover with the dressing and serve immediately.

Yield: 4 servings
