6 md potatoes, cooked til tender : & sliced thin
1 lg onion, sliced thin
1 sm jar Pimentoes
1 c sour cream
1 cn cream of chicken soup
1 ts salt and pepper
1 c bread crumbs
1 c sharp cheddar cheese,
: shredded
Mix sour cream and soup in 2 qt. casserole or 13 x 9 x 2 baking dish.
Mix in everything else, saving 1 egg and crumbs for topping.
Bake 350 oven for 30 min. If made ahead of time and kept refrigerated, then bake for 50 min.
