The heights cafe creole cabbage

Ingredients

1largeHead cabbage, washed, cored and sliced
4slicesBacon, diced
1mediumOnion, sliced
1Clove Garlic, minced
116-oz can chopped tomatoes
16-oz can tomato juice
2ouncesLouisiana Hot Sauce
1cupBeef Consomme
Cajun Seasoning - Tony's or
Prudhomme's
½cupSugar

Directions

In a 4-quart saucepan, saute bacon, onion, and garlic until onion is limp. Add tomatoes, juice, and Louisiana Hot Sauce; simmer 15 minutes.

Add cabbage, consomme and Cajun seasoning (start with 1 teaspoon, then season to taste). Cover and let simmer 1 hour, adding sugar after 45 minutes. Stir occasionally to prevent sticking.
