Thai peanut slaw

Yield: 8 servings

Measure Ingredient
4 cups Cold slaw mix or shredded --
\N \N Red and green cabbag
½ cup Cucumber -- coarsely
\N \N Chopped
⅓ cup Green onion -- sliced
¼ cup Salted peanuts
⅓ cup Red bell pepper -- chopped
½ cup Salted peanuts -- very
\N \N Finely
\N \N Ground
1½ teaspoon Sugar
¼ teaspoon Red pepper flakes
1 teaspoon Fresh garlic -- finely chop
3 tablespoons Peanut or vegetable oil
3 tablespoons Rice vinegar or vinegar
1 tablespoon Soy sauce


In large bowl combine all salad ingredients. In small bowl stir together all dressing ingredients. Just before serving, pour dressing over salad; toss to coat. Yield: 8 servings.
