Ingredients

| 1 | Jalapeno pepper, seeded and diced | |
| ¼ | cup | Cilantro, chopped |
| 1 | Cucumber, seeded and chopped | |
| 1 | Red pepper, chopped | |
| ½ | cup | Peanuts, chopped |
| ½ | cup | Oil |
| ¼ | cup | Rice wine vinegar |
| ½ | teaspoon | Curry powder |
| 2 | tablespoons | Sugar |
| 2 | Garlic cloves, crushed | |
Directions
DRESSING
Mix all of the ingredients for salad together in a large bowl. Whisk dressing ingredients together and toss with salad when ready to serve.
