Thai coleslaw

Yield: 12 Servings

Measure Ingredient
1 Head green cabbage, shredded
½ Head red cabbage, shredded
4 Green onion, sliced
1 Jalapeno pepper, seeded and diced
¼ cup Cilantro, chopped
1 Cucumber, seeded and chopped
1 Red pepper, chopped
½ cup Peanuts, chopped
½ cup Oil
¼ cup Rice wine vinegar
½ teaspoon Curry powder
2 tablespoons Sugar
2 Garlic cloves, crushed


Mix all of the ingredients for salad together in a large bowl. Whisk dressing ingredients together and toss with salad when ready to serve.
