Thai coleslaw

Yield: 12 Servings

Measure Ingredient
1 \N Head green cabbage, shredded
½ \N Head red cabbage, shredded
4 \N Green onion, sliced
1 \N Jalapeno pepper, seeded and diced
¼ cup Cilantro, chopped
1 \N Cucumber, seeded and chopped
1 \N Red pepper, chopped
½ cup Peanuts, chopped
½ cup Oil
¼ cup Rice wine vinegar
½ teaspoon Curry powder
2 tablespoons Sugar
2 \N Garlic cloves, crushed


Mix all of the ingredients for salad together in a large bowl. Whisk dressing ingredients together and toss with salad when ready to serve.
