Texas-brand banana bread

Yield: 2 servings

Measure Ingredient
1½ cup Sugar
½ cup Vegetable Shortening
2 \N Eggs
½ teaspoon Salt
1 teaspoon Baking Soda
¼ cup Buttermilk
2 cups All-Purpose Flour
1½ cup Bananas, Ripe -- mashed
1 teaspoon Vanilla Extract
1 cup Pecans -- chopped

* Preheat oven to 350 F.

1. Spray two 9 x 5 x 3-inch loaf pans with vegetable spray.

2. In a large bowl, cream together the sugar and shortening, until light and fluffy. Beat in the eggs and salt.

3. Stir the baking soda into the buttermilk and add it and the flour to the mixture. Beat well. Mix in the bananas, vanilla and pecans.

4. Bake in center of the oven for 45 to 60 mins, until a toothpick inserted in the center of a loaf comes out clean. Cool in pans 10 mins, then turn out on a rack to cool. Each loaf yields 16 half-inch slices.
