Texas meat skillet

Yield: 6 Servings

Measure Ingredient
2 cups Ground Meat Mix
½ cup Water
14½ ounce Crushed tomatoes
15½ ounce Dark red kidney beans --
\N \N Undrained
1 cup Long-grain rice -- cooked
½ cup Bell peppers -- chopped
2 teaspoons Chili powder
½ teaspoon Salt
½ cup Fat-free cheddar cheese --
\N \N Grated
1 cup Low-fat tortilla chips --
\N \N Crushed

In a skillet, combine Ground Meat Mix, and water. Cover and cook over low heat for 15 minutes. Break up meat with a fork. Stir in crushed tomatoes, kidney beans, rice, bell peppers, chili powder, and salt.

Bring mixture to boiling; reduce heat. Cover and simmer for 20 minutes, stirring occasionally. Sprinkle cheese and tortilla chips over meat mixture.
