Ten flavor shrimp

2 | cups | 5 oz. deveined medium shrimp |
1½ | tablespoon | Minced shallots or scallions |
2 | tablespoons | Brandy |
1½ | teaspoon | Freshly grated ginger or 1 |
2 | tablespoons | Minced parsley |
4 | teaspoons | Grated parmesan cheese |
¼ | cup | Butter |
1 | medium | Clove garlic, mashed |
2 | teaspoons | Soy sauce |
Teaspoon powdered ginger | ||
4 | teaspoons | Fresh bread crumbs |
Directions Drain shrimp. Rinse under cold water andthen soak for 10 - 15 minutesin cold water to remove preserving brine. Drain thoroughly and put on paper towels. Heat butter in skillet until it bubbles. Add shallots and garlic, and saute gently until golden. Add shrimp and toss for a minute or two to warm through. Mix in brandy, soy and ginger, along with parsley. Spoon the shrimp mixture into shells or ovenproof glass individual serving dishes, leaving any juice in pan.
Sprinkle each serving with bread crumbs and Parmesan cheese and then dribble pan juices over top. Heat under broiler until mixture is bubbling ane the crumbs are browned. submitted by marina source Cooking Better For Less
