| 1⅔ | cup | Milk, evaporate; undiluted |

| 2 | teaspoons | Mustard, dry |
| 2 | Eggs; well beaten | |
| 1⅔ | cup | Milk, evaporated; undiluted |
| 1½ | pounds | Shrimp; shelled and deveined |
| 2 | cups | Cheese, American process; shredded |
Directions
3-MINUTE CHEESE SAUCE
Sift together flour, baking powder, and salt. Add eggs and evaporated milk. Blend. Dip shrimp in batter and cook in hot shortening (375 degrees) for 8 to 10 minutes or until lightly browned. Drain on absorbent paper. Serve with 3-Minute Cheese Sauce.
3-Minute Cheese Sauce: Simmer evaporated milk, salt, and mustard in saucepan over medium heat to just below boiling (about 2 minutes). Add cheese; stir over medium heat until cheese melts (about 1 minute longer). Yield: 2-½ cups.
