Taco salad for a crowd

Yield: 50 servings

Measure Ingredient

5 pounds Ground beef
3 eaches Taco seasoning, or more, to taste
5 eaches Heads of lettuce, torn into small pieces
3 bunches Green onions, chopped
1 large Cucumber, chopped
2 cups Chopped celery
10 eaches Tomatoes, cut into wedges
2-3 lbs cheddar cheese, grated
2 cups French dressing or taco sauce
30 ounces Taco chips, crushed

Brown ground beef and drain off fat. Add taco seasoning and mix well. Set aside to completely cool. In large bowl, mix the lettuce with the onions, cucumber, celery and tomato. When beef is completely cooled, add to salad mixture and toss to mix well.

Sprinkle cheese over top, and chill. Just prior to serving, sprinkle the taco chips over the top, and add salad dressing. Mix well and serve immediately. Origin: Homestyle Canadian Classics, Ladies of the Royal Purple. Shared by: Sharon Stevens, July/95.
