Sweet potato croquettes

Measure Ingredient
1½ pounds Sweet potatoes
2 tablespoons Margarine; melted
⅓ cup Light brown sugar; firmly pa
½ teaspoon Cinnamon; ground
1 teaspoon Vanilla extract
8 larges Marshmallows
2 cups Cornflakes; crushed

Recipe by: Fannie Flagg's Original Whistle Stop Cafe Cookbook Scrub sweet potatoes; cook in boiling water 45 mins to 1 hour, or until tender. Drain well and let stand until cool enough to handle. Peel and mash; stir in next 4 ingredients. Cover and refrigerate until chilled. Form croquettes, shaping scant ⅓ cup sweet potato mixture around each marshmallow. Roll in cornflakes, pressing lightly to form 2-inch thick patties. Deep-fry in batches in hot oil (375°F) until browned; drain. YIELD: 8

NOTES : So good with ham or pork chops.
