Sweet potato and pineapple pie

Ingredients

4cupsWell-drained pineapple; 1/4\" dice
2cupsSweet potato; well mashed
½cupDark brown sugar
cupMilk or half and half
3Eggs
½cupPineapple juice
1teaspoonCinnamon
½teaspoonMace
1Nine-inch pre-baked pie shell

Directions

Preheat oven to 350 degrees. ln a mixing bowl, mix the pineapple and sweet potato with the sugar. Mix the milk with the egg, then add the remaining ingredients and mix until smooth. Pour into pie shell and bake for 25 minutes until set.
