Sweet potato pie 4

19 inch pie crust; unbaked and fluted
2mediumsSweet potatoes; diced
1Stick unsalted butter
1cupSugar
2largesEggs; beaten
¼cupButtermilk
½teaspoonVanilla extract

Directions

Preheat oven to 325. Place the potatoes in cold water, bring to a boil and cook until tender, 15-20 minutes. Drain, and mash the potatoes while hot with the butter and sugar. Let this mixture cool slightly and stir in the beaten eggs, buttermilk and vanilla.
