|1||9 inch pie crust; unbaked and fluted|
|2 mediums||Sweet potatoes; diced|
|1||Stick unsalted butter|
|2 larges||Eggs; beaten|
|½ teaspoon||Vanilla extract|
Preheat oven to 325. Place the potatoes in cold water, bring to a boil and cook until tender, 15-20 minutes. Drain, and mash the potatoes while hot with the butter and sugar. Let this mixture cool slightly and stir in the beaten eggs, buttermilk and vanilla.
