Sweet avocado puree

Yield: 4 servings

Measure Ingredient
2 \N Ripe chilled avocados,
\N \N Seeded, diced
¼ cup Fresh lime or lemon juice
⅓ cup Confectioner's sugar or
\N \N More
\N \N Raspberries
\N \N Fresh mint sprigs or chopped
\N \N Pistachio nuts

With the back of a spoon, press the avocados through a sieve into a bowl. Add the lime juice and sweeten with sugar.

Transfer the puree to 4 chilled wine glasses and garnish with raspberries, mint and/or pistachio nuts.

Yield: 4 servings
