Sweet and sour sauce chinese style

Ingredients

| 1 | each | Onion; finely chopped | 
| 1 | tablespoon | Oil | 
| 6 | tablespoons | Chicken stock | 
| 1½ | tablespoon | Wine vinegar | 
| 1½ | tablespoon | Sugar | 
| 1½ | tablespoon | Soy sauce | 
| 2 | teaspoons | Tomato paste or ketchup | 
| 2 | tablespoons | Sherry wine | 
| 1½ | tablespoon | Cornstarch | 
| Salt | ||
| Freshly ground black pepper | ||
| 1 | teaspoon | Chinese chili sauce (opt'l) | 
Directions
Fry the garlic in the oil until soft but not colored. Add the stock and the next five ingredients. Blend the cornstarch to a paste with ¼ cup water and stir in. Cook for 1 minute. Taste and season, adding the chili sauce if wished.
