Sweet and sour sauce chinese style

6tablespoonsChicken stock
tablespoonWine vinegar
tablespoonSugar
tablespoonSoy sauce
2teaspoonsTomato paste or ketchup
2tablespoonsSherry wine
tablespoonCornstarch
Salt
Freshly ground black pepper
1teaspoonChinese chili sauce (opt'l)

Directions

Fry the garlic in the oil until soft but not colored. Add the stock and the next five ingredients. Blend the cornstarch to a paste with ¼ cup water and stir in. Cook for 1 minute. Taste and season, adding the chili sauce if wished.
