Sweet 'n' sour loaf

Ingredients

2Boxes tofu; lite, extra firm
1cupSeasoned bread crumbs
¼cupParmesan cheese
¼cupGarlic
¾cupRaisins
½cupOatmeal; uncooked
½cupTomato sauce
1tablespoonHoney
1teaspoonDry mustard
¼cupKetchup

Directions

PREP TIME: 10 minutes

COOKING TIME: 1 hour 15 minutes STANDING TIME: 15 minutes

1. Preheat oven to 350F. Spray 1 large loaf pan with vegetable cooking spray. Drain tofu in colander.

2. In a food processor, combine bread crumbs, cheese, garlic, raisins and oatmeal until blended. Add tofu and tomato sauce and blend. Pour mixture into loaf pan. Bake 45 minutes. 3. Combine honey, mustard and ketchup and baste top of loaf. Return loaf to oven and bake 30 minutes more. Let stand 15 minutes before serving.

Serving Ideas : excellent

NOTES : Kids and adults alike will love this incredibly flavorful mock meatloaf. Use leftovers to make tasty sandwiches.
