Sun-dried tomato dressing

| ¼ | ounce | Flat anchovy fillets |
| 2 | tablespoons | Lemon juice |
| 4 | teaspoons | Olive oil |
| ½ | teaspoon | Low-sodium soy sauce |
| ¼ | teaspoon | Fresh ground pepper |
Directions

Soak tomatoes in boiling water to cover, 2 minutes. Drain and reserve water. In a mini processor, combine tomatoes, 2 T reserved soaking liquid, anchovies and garlic; process until finely chopped. Add lemon juice, oil, soy sauce and pepper; process until blended. Stir ini 2 more T soaking liquid. Cover and refrigerate until ready to use. (wrv)
