Best sun-dried tomato vinaigrette

Yield: 4 Servings

Measure Ingredient
2 tablespoons Sun-dried tomatoes; finely chopped
2 tablespoons Balsamic/red vinegar
1 teaspoon Dijon mustard
1 \N Garlic clove; minced

pn Salt pn Pepper ⅓ c Extra-virgin olive oil In small bowl, whisk together tomatoes, vinegar, mustard, garlic, salt and pepper; gradually whisk in oil.

Vinaigrette goes particularly well with leafy spring lettuce.
