Sun-dried tomato vinaigrette - bon appetit

Ingredients

| 40 | Oil-packed sun-dried tomato halves, drained (1/3 C oil reserved) | |
| ½ | cup | Minced shallots |
| 2 | tablespoons | Minced garlic |
| 2 | cups | Chapped fresh basil |
| 1 | cup | Plus 3 T olive oil |
| ½ | cup | Red wine vinegar |
| Salt & freshly ground pepper | ||
Directions
Mince tomatoes in processor. Mix in shallots and garlic . Add ⅓ cup reserved tomato oil, basil, olive oil and vinegar and blend until creamy. Season with salt and pepper. (Can be prepared 3 days ahead.
