Sun-dried tomato vinaigrette - bon appetit

2 1/2 cups

Ingredients

40Oil-packed sun-dried tomato halves, drained (1/3 C oil reserved)
½cupMinced shallots
2tablespoonsMinced garlic
2cupsChapped fresh basil
1cupPlus 3 T olive oil
½cupRed wine vinegar
Salt & freshly ground pepper

Directions

Mince tomatoes in processor. Mix in shallots and garlic . Add ⅓ cup reserved tomato oil, basil, olive oil and vinegar and blend until creamy. Season with salt and pepper. (Can be prepared 3 days ahead.
