Sun-dried tomato vinaigrette - bon appetit

2 1/2 cups

Ingredients

Quantity Ingredient
40 Oil-packed sun-dried tomato halves, drained (1/3 C oil reserved)
½ cup Minced shallots
2 tablespoons Minced garlic
2 cups Chapped fresh basil
1 cup Plus 3 T olive oil
½ cup Red wine vinegar
Salt & freshly ground pepper

Directions

Mince tomatoes in processor. Mix in shallots and garlic . Add ⅓ cup reserved tomato oil, basil, olive oil and vinegar and blend until creamy. Season with salt and pepper. (Can be prepared 3 days ahead.
