Stuffed pepper pie

Ingredients

QuantityIngredient
3Green bell peppers; halved
¼cupChopped onion
1cupWater
2tablespoonsButter
1⅓cupInstant potato flakes
¼cupMilk
1Egg; beaten
1poundsSausage; cooked
1cupMozzarella; shredded

Directions

Boil peppers 15 minutes. Drain; arrange cut side up in a pie pan. Combine onion, water and butter and bring to a boil. Stir in potato flakes, milk and egg. Stir in sausage. Spoon into pie pan over peppers. Sprinkle with cheese. Bake at 350 degrees 15-20 minutes.
