New stuffed peppers

Yield: 8 servings

Measure Ingredient
10 ounces Spinach; frozen and thawed
1 large Onion; chopped
8 ounces Feta cheese
1 cup Cottage cheese
\N \N Pepper; to taste
4 mediums Red and green bell peppers
3 \N Eggs

Preheat oven to 375 degrees. Defrost spinach, drain well. Saute onion in butter until tender. Beat eggs together and then stir in spinach and mix together. Stir in feta cheese, cottage cheese, sauted onions and black pepper to taste. Clean peppers, removing stems andseets, and cut in half legnthwise (vertically). Fill peppers with spinach mixture and place in buttered casserole pan, sprinkle top of peppers with parmesan cheese. Bake in 375 degree oven for 30 minutes.
