Strawberry-kiwifruit jam

Measure Ingredient
3 cups Crushed Strawberries
3 \N Kiwi Fruit, Peeled And Diced
1 tablespoon Lemon Juice
1 tablespoon Minced Crystallized Ginger
1 pack Powdered Pectin
5 cups Sugar

Combine strawberries, kiwi fruit, lemon jce, ginger, and pectin in a large saucepot. (I would use a dutch oven) Bring to a rolling boil, stirring frequently. Add sugar and return to a rolling boil, stirring constantly.

Boil hard 1 minute. Remove from heat. Skim foam if necessary. Pour hot into hot jars, leaving ¼" head space. Adjust caps. Process 10 minutes in boiling water bath. Yield about 6 half pints.
