Strawberry muffins w/strawberry-cream cheese spread

Yield: 12 servings

Measure Ingredient
1 cup Strawberries, chpd
¾ cup + 1T sugar
2 cups Flour
2 teaspoons Baking powder
1 teaspoon Salt
8 ounces Cream cheese, softened
3 \N Eggs
¼ cup Oil
½ cup Milk
1 teaspoon Grated orange peel
12 \N Strawberries, cut fan-shape
¼ cup Strawberries, crush OR chp

STRAWBERRY CREAM CHEESE SPRD

Sprinkle the chpd strawberries with 1T sugar and set aside. Sift together flour, remaining 3/4c sugar, baking powder, and salt in lg bowl. Beat eggs until light in a sm bowl. Add oil, milk, and orange peel, and blend well. Add egg mixture to flour mixture. Stir until mixed, 10-15 strokes. Drain chpd berries and fold into batter. Fill paperlined cups ⅔ full. Bake 400 F, 15 mins, or until a toothpick incerted in center comes out clean. Serve warm or cooled with Strawberry-Cream Cheese Spread. Garnish each muffin with a fan-shaped berry.
