Stir-fried spinach with ginger and almonds

Ingredients

| 1 | tablespoon | Soy sauce |
| ½ | teaspoon | Vinegar, wine |
| ¼ | teaspoon | Oil, sesame |
| 1 | tablespoon | Almonds, sliced |
| ½ | tablespoon | Oil, peanut |
| ¼ | teaspoon | Ginger, ground |
| 1 | pounds | Spinach, fresh |
Directions
Trim, wash, and drain spinach. Cut into 1" to 2" widths. Mix miso, soy sauce, vinegar, and sesame oil; set aside.
Heat wok over high heat. Add almonds and stir-fry until fragrant and edges turn golden, about 45 seconds. Transfer to plate.
Heat peanut oil in wok. Add spinach and ginger and stir-fry just until tender, about 3 minutes. Drizzle with bean mixture. Serve immediately!
