Stir-fried spinach with bacon

Ingredients

| 6 | slices | Bacon -- cut in 1\" pieces |
| 3 | Scallions -- chopped | |
| 1 | tablespoon | Vinegar |
| 1 | tablespoon | Sherry |
| 1 | teaspoon | Sugar |

| 4 | Fresh Mushrooms -- thinly sliced | |
| 2 | tablespoons | Oil |
| ¼ | teaspoon | Dry Mustard |
| 2 | teaspoons | Soy |
Directions
SAUCE
1. Heat the wok. Add the bacon and cook until almost crisp. Pour off the bacon grease.
2. Add 2 Tbs oil, the scallions, and fresh spinach. Stir-fry quickly until the volume of the spinach is reduced to one half.
3. Add the remaining ingredient with the sauce and cook 1 min more.
Serve Immediately.
