Steamed carrot cake

Yield: 4 Servings

Measure Ingredient
1 cup Sugar
2 Eggs
¾ cup Vegetable oil
1 Jar baby food, carrots,
Junior size -- *
1 cup Flour
1 teaspoon Soda
1 teaspoon Cinnamon
½ teaspoon Salt

In large mixing bowl. combine sugar, eggs and oil. Add strained carrots and mix well. Add dry ingredients and beat until thoroughly blended. Pour into greased and bloured baking pan. Cover and bake on high for 3 to 4 hours. *Recipe may be doubled for 5-quart pot but use 2 junior size or 3 small jars of stained carrots. Women's Home Cooking-Slow Pot Cookery
