Steak & summer fruit kabob salad

1mediumGranny Smith apple cut into 8 wedges
1mediumOrange, unpeeled cut into 8 wedges
1Nectaine; cut into 8 wedges
1largePlum; cut into 8 wedges
8cupsSalad geens; washed & torn
cupSteak Sauce
¼cupLime juice
2teaspoonsPacked brown sugar
1tablespoonJalapeno, seeded & minced
¼cupLime juice
2tablespoonsHoney or brown sugar
1tablespoonJalapeno; seeded & minced
1teaspoonFresh cilantro, minced
teaspoonLime zest (optional)

Directions

MARINADE

SALAD DRESSING

Preparation time: 30 min.

1. Cut steak and fruit as directed above. Combine steak sauce, lime juice, brown sugar and jalapeno. Add beef cubes, apple, orange and nectarine wedges to marinade. Marinate 15-30 min. Do not marinate plum wedges.

2. Thread skewers with alternating beef cubes and fruit wedges, including plums

3. Grill kabobs 4-6 inches from med. coals for 10-12 min. turning to grill all sides.

4. Toss salad greens with dressing. Place steak and fruit over greens on plates or platter.

Serving Suggestion: Crusty French Bread.
