Spinach salad with orange dijon vinaigrette

| 1 | tablespoon | White Wine Vinegar |

| ¼ | teaspoon | Pepper |
| 4 | cups | Spinach Leaves Or Salad Greens, Fresh, Torn |
| 4 | cups | Bibb Lettuce; Torn |
| 2 | cups | Mushroom; Sliced |
Directions
In large bowl, whisk together oil, orange juice concentrate, 1 tablespoon water, vinegar, mustard, salt and pepper. Just before serving, add spinach, Bibb lettuce and mushrooms; toss to combine. Makes 4 servings. Per serving: 142 cals, 4 g pro, 11 g total fat, 10 g carb, 3 g fibre.
